I wrote in a previous post that after a few days of low-carb dieting, “it’s like you never even heard of a potato before!” If you don’t believe me, keep reading.
My husband and I belong to a CSA, which is usually a great thing, until sweet corn is in season, and we get like 12 ears for one person to eat in a week. (I’m sure not going to eat them. We end up giving them away or freezing them.) And, of course, our farmer grows potatoes. Fortunately, potatoes keep much better than corn, and it’s a good thing, too, because when it’s my turn to cook, I forget the foolish things even exist. I could make them for my husband, and he would eat them – except it doesn’t even occur to me.
